please i would like to know what happens next if i use my Xbox One with HDMI adapter and non-widescreen monitor?

That is a VGA to a HDMI adaptor which is used if your monitor only supports VGA. 

So here is how it works. Plug VGA into monitor and then the other end of the VGA to the adaptor, then plug the HDMI into your XBOX 360.

That should work a treat.

it doesn't work with Xbox One, it does work Xbox 360? correct?

Yes it will still work with this cable

The line out is where you will put a audio cable because VGA does not support sound.

You will need some speakers to plug the audio cable into, also you might struggle with Full 1920 x 1080p if the monitor is that old, some only support 720p.
